Our email notifiers start with something like this:
From: JoeBlow@OurCompany.com Subject: $[teamSubject] Summary $[teamReportString]
You should be able to replace the hard-coded email address with a parameter inside $[].

a lot of mail systems nowadays don't accept a different "from" email address than the one you use to connect to the server so you may not be able to do it.
Depending on the number of different "from" you need, you may be able to simply create multiple mail configurations, each with a different "from" address. If not @sbarry's solution seems to be the right avenue to explore.
